In Mexico, the barrels are re-toasted to a medium toast.
Single barrels of aejo were chosen and filtered via a unique method to eliminate color while retaining the taste character.
Notes on the palate: This spirit has a salty, pulpy scent with hints of cashew, anise, and wood. The richness of the initial taste is accentuated by white pepper and nectarine zest, followed by semi-sweet peach nectar and a velvety finish.
